The expiration date on eggs indicates how long they can be safely eaten raw and is based on the length of time it takes for Salmonella bacteria to grow.
When you buy eggs and bring them home, keep them in the fridge. According to the Food Sanitation Act, shell eggs should be stored at temperatures below 10°C.
You should also keep eggs in a place in the fridge where the temperature changes as little as possible to avoid condensation forming due to temperature changes, which can make eggs more susceptible to spoilage.
